Pergamino has been moving the needle in Colombian specialty cafes for 13 years now. That’s an entire lifetime ago in coffee years. (Just look at our article from 2012 on the brand for proof. The hats! The ties! The suspenders! Peak early-’10s specialty coffee.) The years have been kind to Pergamino. The roaster has since opened double digit cafes around Medellín, and recently that count grew to 11.
The latest cafe is inside the bio-hotel El Tesoro and features a thoughtful, warm design as well as an in-store roaster, a first for Pergamino, to further enhance the coffee and education experiences for the guests of the hotel and cafe. And also, having a world-class cafe at your hotel, that in and of itself is a dream come true. For those who aren’t familiar, will you tell us about your company?
We produce, roast, and serve the highest quality coffees in Colombia. Additionally, we work hand in hand with over 1,500 allied producers across the country. Most of these coffees are exported green to different parts of the world, and contrary to what usually happens in Colombia, some of the best lots are not exported; instead, we roast and serve them in our specialty coffee shops in Medellín, or ship them through our e-commerce to all of Colombia, the United States, and Canada. We are privileged to work in every link of the coffee chain.
Can you tell us a bit about the new space?
Last Friday, July 25th, we opened the doors to our newest Pergamino store, located inside bio-hotel Wake El Tesoro. This marks our 11th location and our arrival in a new part of the city, bringing with us the same commitment to creating extraordinary experiences through specialty coffee.
Our guiding principle when designing any store is that each space should be shaped by the community around it. Rather than imposing, we seek to integrate, to play an active role, and to become a true gathering place for all. That’s why this new store spans 400 square meters, our largest one yet, with functional areas for different needs, including a kids zone and something we’ve always dreamed of: an in-store coffee roaster that will be part of the customer experience. Here, we’ll also train our team and roast small experimental batches.
What’s your approach to coffee?
Exceptional sensory quality, full traceability to the origin, and fair payment to the producer.
Any machines, coffees, special equipment lined up?
A Roaster Diedrich IR-12 and La Marzocco Linea PB three-group espresso machine.
How is your project considering sustainability?
We believe in a transparent and fair coffee chain; we respect the origin and create economic sustainability for the communities we work with.
What’s your hopeful target opening date/month?
We opened July 25th, 2025.
